to Laidlaw Butchers Since
the Paxton family moved their butcher's business out of Aberdeen
Market and into a former Fabric shop in a close between Union
Street and the St Nicholas Centre there has been no looking back.
The current owner Andrew Paxton's grandfather bought the business
from John Laidlaw in the 1960's. Andrew's father and uncle
continued the business relinquishing control to Andrew in 1996. Andrew
worked at Donald Russell for six years serving four of those as
Production Manager before performing the same role at salmon exporter
John Ross Junior.
Having returned to the family business in 1996 he took time out
to look at shopping patterns in the City Centre lingering on street
corners for a number of days. Andrew noticed an unusually high
number of shoppers used the McCombie’s Close. A lease
was confirmed and the conversion of the shop unit to be a butchers
involved inconsiderable investment. With good Aberdonian
thriftiness and re-utilisation of his existing refrigeration Andrew
was able to exact a transformation that thrust his business forward.
